Healthy Banana Pancakes recipe with cinnamon (Easy!)

- 2 medium bananas overripe
- 2 large eggs
- ½ cup milk
- 1 ½ cup rolled oats
- 2 teaspoon baking powder
- ½ teaspoon cinnamon powder
- pinch of salt
- olive oil or butter for cooking
Add all ingredients into a blender. Blend on high speed until you have a smooth batter. Let the batter sit for 3-5 minutes to thicken.
Heat a skillet or non-stick pan over medium-high heat and lightly grease with butter or oil. I like to use a paper towel to spread the oil or melted butter into a thin layer across the pan.
To make each pancake, pour ¼ cup batter into the hot pan - I like to make about 3 pancakes on the pan at one time. Cook for about 2 minutes until you see small bubbles forming on top and the edges forming.
Flip the pancakes using a spatula and cook for another 1-2 minutes until the surface of the pancakes looks golden brown. Be careful not to overcook it. If the pan gets too hot, reduce the temperature to medium-low heat.Try not to press down too hard on the pancakes, this can flatten them and make them lose their fluff. Repeat the above steps for the remaining batter. Stack the pancakes and top with a little bit of cinnamon, maple syrup and fresh fruits, and serve immediately!
