Healthy Banana Pancakes recipe with cinnamon (Easy!)

Stuck with a couple of overripe bananas and don’t know what to do with them? Don't make yet another banana bread, try this easy Cinnamon Banana Pancakes recipe instead!

  • 1 high-speed blender

Ingredients
 

  • 2 medium bananas overripe
  • 2 large eggs
  • ½ cup milk
  • 1 ½ cup rolled oats
  • 2 teaspoon baking powder
  • ½ teaspoon cinnamon powder
  • pinch of salt
  • olive oil or butter for cooking

Instructions
 

  • Add all ingredients into a blender. Blend on high speed until you have a smooth batter. Let the batter sit for 3-5 minutes to thicken.
  • Heat a skillet or non-stick pan over medium-high heat and lightly grease with butter or oil. I like to use a paper towel to spread the oil or melted butter into a thin layer across the pan.
  • To make each pancake, pour ¼ cup batter into the hot pan - I like to make about 3 pancakes on the pan at one time. Cook for about 2 minutes until you see small bubbles forming on top and the edges forming.
  • Flip the pancakes using a spatula and cook for another 1-2 minutes until the surface of the pancakes looks golden brown. Be careful not to overcook it. If the pan gets too hot, reduce the temperature to medium-low heat.
    Try not to press down too hard on the pancakes, this can flatten them and make them lose their fluff.
  • Repeat the above steps for the remaining batter. Stack the pancakes and top with a little bit of cinnamon, maple syrup and fresh fruits, and serve immediately!
